Slow cooker salsa chicken over yellow rice
Ingredience;
Boneless skinless chicken thighs
1 tsp kosher salt
1/2 tsp Black pepper
2 (16oz) containers of medium salsa
1/4 cup oregano
2 packages of Yellow rice
Sour cream
Tortilla chips
Directions:
Place chicken in slow cooker, sprinkle with salt, oregano and pepper, add salsa. Cook for 3-4 hours.
Make Yellow rice (takes 30 minutes)
Take chicken out and put in a bowl and shred, slotted spoon out the salsa from the slow cooker and mix with shredded chicken.
Serve over yellow rice.
Serve with sour cream and tortilla chips
