Coconut Loaf Cake
Ingredience:
1 cup (2 sticks) Unsalted Butter
1 1/2 cups sugar
1 1/2 cups Flour
1/2 tsp Baking Powder
1 tsp Salt
3 large eggs
1/2 tsp Vanilla extract
1/2 tsp Almond extract
1/2 cup unsweetened coconut Milk (canned)
1 cup Shredded Coconut (sweetened)
Coconut Glaze
1 cup confectioners sugar
1/3 cup unsweetened coconut milk (or regular milk)
1 tsp vanilla extract
1 tsp coconut extract (optional)
Instructions:
preheat over 325*
In an electric mixer, beat together Butter and Sugar
In a separate bowl, combine Flour, Baking powder and salt.
Add one egg at a time to the Sugar/Butter mixture.
Beat in Extracts
Alternate Coconut milk and flour mixture
Add Shredded Coconut
