Some recipes will call for Unsliced Sour Dough bread, I use unsliced stuffing white bread, to me it tastes the same once bananas are stuffed, cinnamon sugar is added with syrup. I find the regular uncut white bread easier to find, but this is completely up to your taste and what you can find in your area, my advise is, handle the white bread carefully as it can be mushier when put into the egg. This takes at least 1 egg per slice, if you are making 2 slices, mix 2 eggs, 4 slices, 4 eggs... and so on....
Ingredients:
- Sourdough (or uncut white) bread cut 2 inch thick
- Bananas (you will need a half of a banana for each slice)
- 1 tsp cinnamon
- 1/3 cup sugar
- Eggs (Approximately1 egg per slice)
- 1/2 teaspoon vanilla extract
- 1/4 cup milk
- Oil for frying (not coconut oil)
- Powdered sugar (if desired)
- Butter and Maple syrup (if desired)
Cinnamon Sugar:
Mix together sugar and cinnamon.
(Set aside.)
Egg Wash:
Mix milk, egg and vanilla until well blended.
(Set aside.)
French Toast:
Cut a 1-inch pocket into one side of each bread slice.
Cut peeled bananas in half lengthwise, the cut each piece in half (into 4 pieces)
Stuff 2 pieces in each pocket of bread.
Heat oil in pan to 350ºF. (if oil is not hot enough, bread will just soak up the oil)
Using a large bowl, dip stuffed bread into egg mixture, soaking a few seconds.
Fry in hot oil (about 3-4 inches) until lightly browned, turning to brown both sides, about 3 minutes.
(Lets note: If you own a deef fryer, do everything the same, but deep fry until lightly golden brown)
Drain on paper towels (do not let toast get cold)
Lightly press into cinnamon sugar on top and bottom, sprinkle with powdered sugar, serve immediately.
If desired, spread with Butter and/or Maple syrup.
Serve with Bacon, Sausage or fresh fruit.
