Ingredience:
11/2 Cups all purpose flour
3/4 Teaspoon Salt
3 Large Eggs
11/2 Cups Milk
4 Tablespoons Unsalted Butter
Cinnamon Sugar (as much as you like)
12- Cup muffin tin
In a large bowl, mix together Flour and Salt. In another bowl beat together eggs & milk, pour into flour & salt mixture, stir together until it is still lumpy, do not over beat.
Allow batter to sit for no less than 30 minutes or up to 1 hour.
Preheat oven to 425*F. Place 1 teaspoon of butter in each muffin cup, heat that in the oven until butter melts (takes about 1 min)...divide the batter among the cups.
Bake until puffed and golden brown, about 15-20 minutes, once popovers come out of the oven they will begin to "deflate" ...thats Okay! Now the fun begins...the deflating will create a "well" or a pocket in the center, douse the popover with cinnamon sugar and fill the well with syrup....serve warm.
